Edinburgh's 'first whole-animal restaurant' restaurant for West End

A new restaurant in the West End in Edinburgh will open this July, in line with full-range cuisine.

Palmerston, a 60-square-foot restaurant with bar, bakery, cafe and butcher's, is run by former residents Lloyd Morse and James Snowdon.

The restaurant will contain a bakery and café. Breads and pastries will be served daily with coffee, from Edinburgh's own Obadiah Coffee, and a bar which features local liquors and beers.

Lord Morse, who has worked at some of London's best restaurants, including Spring led by Michelin-starred chef Skye Gyngell, will be on the chef and butcher team.

Seasonal cuisine includes grilled East Neuk mutton cutlets cooked alongside beets and bacon, gnocchi with stews, chilli and creme fraiche and whole grilled mackerel with white beans, spinach and Pernod cheese.
