Xpress is delighted to be working with an independent small boutique hotel client who has established themselves with an outstanding hotel, restaurant and bar reputation based on supplying outstanding locally sourced fresh sea and land produce all within 25 miles of their hotel. The hotel itself is set in an idyllic location within the world-famous North Coast 500 road touring route of the Highland and island of Scotland.
Our client is now looking to attract a Sous Chef to assist the newly appointed Head Chef in achieving outstanding awards and accolades for their cooking and fresh local seasonal menu as part of the business being repositioned for growth and expansion from 2022 onwards.
As Sous Chef it will be your joint responsibility to grow and establish the overall “Food” concept! Building upon the solid foundations that have been established over the last generation! As Sous Chef you will be expected to bring your own flair to the table the restaurant has a strong “Seafood” theme and following so this would be something that any newly appointed Sous Chef would need to be able to understand and enhance as part of the overall Menu Concept. The kitchen and the brigade like everyone this year have all been stretched so it would be one of the Sous Chef's duties to review the current structure with a view to build and reshaping for 2023. The owners are committed to a Kitchen establishment that is associated with being known for quality and value over volume, poor service and poor quality. As Sous Chef you would be fully expected to be an outstanding ambassador for the hotel, your duties and responsibility will clearly be to manage and run all agreed financial budgets, train and develop all personnel to the highest levels ensure that all health and safety standards are being complied to. Accolades and recognition on the wider landscape would be something that the owners would be looking for this Kitchen Ambassador to be striving for as the business grows and expands.
Working in a rural community will not be every person’s cup of tea! However, given that over the last 18 months many individuals are re focussing on Work-Life balance this might well suit someone who wants to establish themselves and perhaps their family in a rural yet growing community, where working with a strong locally based employer with a well-established reputation who care about their people and in turn working in an open and transparent manner with their suppliers makes life for everyone much more enjoyable. Then this might well be the job for you! As an applying candidate, you must be able to show a sound and robust Kitchen track record within your cv highlighting stability and growth coupled with quality and achievements, your own style of food and the types of establishments you have been currently working to date. Given that this appointment is all about cooking for a restaurant with guests circa 60 / 80 covers per service, we maintain all fresh produce, to a minimum of 2 rosette level cookery.
