Job Description

Saltire Patisserie are a Sister Company of Saltire Hospitality we are a leading supplier of Bespoke desserts to the hospitality industry our clients include The Dome, Montpeliers, The Lisini Group, Dynamic Earth, amongst others. We at present are looking to recruit a Head Pastry Chef to head our pastry team in our purpose built unit at Loanhead ,our Bakery Director Ian Blackley heads our Bakery and Pastry.

The Hours we operate are Monday – Friday 6am till 3pm hours include every second Sunday with a day off during the week. Wages are negotiable according to experience. 

We are looking for a Pastry Manager who will have full responsibility for operating the pastry department. As Pastry Manager, you are responsible for operating the pastry section of the kitchen while working closely with the Bakery Manager and Bakery Director, you will be required to plan production and develop seasonal offerings.The successful candidate will be able to create high quality pastry dishes with the standard recipes and presentations in order to maintain quality standards and consistency of product.Further details about this key position can be found below:

Duties and Responsibilities:

  • Manages all day-to-day operations of the pastry section of the kitchen.
  • Ensure compliance with current food standards and Health and Safety Legislation. Whilst further ensuring Culinary Standards and Responsibilities are met for the wider Pastry Team.
  • Plan, cost, produce and develop offerings (including seasonal).
  • Assist senior management in the marketing and development of the pastry department.
  • Prepare a wide variety of goods such as cakes, traybakes, cookies, and specialist desserts. following traditional and modern recipes.
  • Able to develop, designs, or creates new ideas and items for Pasty Kitchen.
  • Decorate pastries and desserts using different types of icings, toppings etc. and ensure the food presentation will be beautiful and exciting
  • Ensure excellent quality throughout the dessert offerings.
  • Supervise and coordinate all pastry and dessert preparation and presentation.
  • Monitor stocks for pastry ingredients such as flour, sugar etc. and make appropriate orders within budget.
  • Must possess a positive attitude and have the ability to work with a variety of people and in cooperation with co-workers efficiently and effectively
  • Guide and motivate pastry assistants and bakers to work more efficiently.

Experience:

  • Minimum of 5 years’ experience in pastry cooking or as a Pastry Chef.
  • Good knowledge of different types of pastry, dessert, cake decorating.
  • Ability to work a variety of shifts including weekends, please note we do not require evening hours, this will be day-shifts only.
  • Positive attitude and good communication skills.
  • Worked with volume food production.
  • Supervised a team of people
