THE ROLE - EXECUTIVE SOUS CHEF CAMERON HOUSE

Together with the Executive Head Chef, you will lead a creative and highly driven team of Head Chefs working across 6 different kitchens to continually improve guest experience and team satisfaction, whilst maintaining health and safety and food hygiene standards and working within operating budgets.

As the "number two" you'll assist in the management of a brigade of over 60 Chefs across 4 restaurants, 2 bars, room service, large scale meetings and events, and our own pastry kitchen.  It's an extremely busy and dynamic environment, perfect to hone your leadership skills.

Key things you will be responsible for as Executive Sous Chef Cameron House

Working with the Executive Chef and F&B Director in the planning and delivery of food sales plans and promotions.

Driving compliance through all kitchens and teams in relation to food safety, fire safety, health and safety, security, wellbeing and security, through daily floor walks, spot checks and audits.

Overseeing the allergen and food safety education of all levels of the team

Hosting the day-to-day operation, being present and accessible to your teams, the wider operational teams and our guests

Driving the consistent delivery of exceptional food standards at the correct volumes

Driving first class culinary knowledge, and awareness of food trends

Enhancing the guests experience through service creativity, bespoke menus and specials

Delivery of food cost targets through effective stock controls, strong management of requisitions and orders based on forecast and stock takes, and managing key lines and recording wastage

Effective communication through daily shift briefings, handovers, monthly meetings and the use of all our systems

Effective handling, and resolve of food complaints and operational follow up of feedback 

Attendance at Weekly operational/business sheet meetings and pre-event meetings

Managing resources in line with operational demand and budgets, reviewing and adjusting daily.

Organising rotas and work plans, holiday entitlements and requests

Recruitment, induction, and ongoing training and progression of the team, including leading our Chef Apprenticeship programme

Providing feedback and managing performance through probationary reviews, 1:1s and appraisals. 

Meeting all legal requirements to keep guests and employees safe, and the business compliant with statutory obligations.

TO BE ELIGIBLE TO APPLY YOU WILL ALSO NEED:

SVQ in Food Productions at SCQF Level 5 or equivalent qualification or equivalent industry experience
Advanced Food Hygiene Qualification
Current or recent Senior Chef/Head Chef experience preferably within a multi outlet 4/5 star hotel/resort and must have experience of large scale events and managing large teams
Excellent communication skills 
Ability to quickly build rapport and strong working relationships, with a flexible approach to work
Exceptional interpersonal skills, and passion for service excellence
Initiative, creativity and ability to solve problems
Proficient IT skills with knowledge of Office software, including Excel, and ability to use technology (we use systems such as Procure Wizard/ResDiary/Resort Suite/Fourth Hospitality and Recruitgenie)
IOSH Managing Safely and First Aid at Work qualifications are also advantageous
